Cat knows you’re all excited by this.

I made this awesome chicken dish last night, so for posterity and in case anyone wants to try, I shall try and remember the random amounts and what not.

Four chicken breasts, chopped into happy little chunks.

Half a packet of presliced green olives (cause they were on special)

3 tablespoons capers in brine

1/3 of a normal size pack of pitted prunes (maybe 1/2 a cup?), chopped

3 tablespoons olive oil

3 tablespoons balsamic vinegar

A goody hefty amount of this garlic/parmesan/origanum spice mix I have.

Bung it all together in an oven dish, then pour over about a 1/2 cup brown sugar and a 1/3 cup white wine (my half cup was a Floyd half cup, so uh…yeah) .

In to the oven. Mine has only one heat setting (yes, it’s sad, I know) so it was on high for 30 min) .

I served with jasmine rice. Mmmmmm yum yum yum
